PORK LOIN WITH ORANGES

In the United States we are just beginning to enjoy heritage pork, but in Tuscany one of the most amazing pigs, the Cinta Senese, has been reared in the traditional way, providing the meat used in salumi production as well as for many wonderful meals. This dish, based on a traditional Tuscan one using the ancient breed, is a classic example of traditional home cooking at its best. However, for the flavor to reflect tradition, heritage pork is required.

Serves 6

4 large organic oranges

¼ cup extra-virgin olive oil

2½ pounds boneless pork loin roast

Salt and pepper

½ cup dry white wine

2 large yellow onions, trimmed and cut crosswise into 8 slices each

4 bay leaves

2 tablespoons chopped fresh chives
